Semolina (coarse)
Semolina is a coarse flour milled from durum wheat, with a pale yellow colour and a slightly gritty texture, used to make pasta, couscous, and some breads and puddings. Its high gluten content and coarse grind give pasta made from it a firm, resilient texture when cooked. It is also cooked into a sweet or savoury porridge in various cuisines.
