Sherry

Sherry is a fortified wine from Spain, ranging from very dry to intensely sweet depending on the style, with a distinctive nutty, slightly oxidised flavour. It is drunk on its own and used in cooking, particularly in Spanish and some Chinese dishes, sauces, and soups, where its depth adds complexity. Dry and sweet sherries are used quite differently, so recipes usually specify which type is intended.
