Smoked paprika

Smoked paprika is made from peppers that have been dried by smoking over wood fires before being ground, giving it a deep, smoky flavour in addition to the typical sweet or mild pepper taste of regular paprika. It is used in Spanish and Latin American cooking, in stews, rubs, and rice dishes, adding a distinctive smokiness without needing an actual smoker. It comes in sweet, bittersweet, and hot varieties.
