Smoked salmon (flaked)
Smoked salmon is salmon that has been cured with salt and then smoked, either cold-smoked to a silky, translucent texture or hot-smoked to a firmer, flakier result. It is eaten thinly sliced on bagels and canapés, or flaked into pasta, salads, and quiches. Cold-smoked and hot-smoked salmon differ considerably in texture and are generally used in different types of dishes.
Flaking produces thin, light pieces that pack more loosely — and weigh less per cup — than a whole or chopped form.
