Soba noodles (dry)

Soba noodles are Japanese noodles made from buckwheat flour, sometimes blended with wheat flour, with an earthy, slightly nutty flavour and a firm, chewy texture. They are served hot in broths or cold with a dipping sauce, and are typically rinsed under cold water after boiling to remove excess starch and firm up their texture. Their buckwheat content gives them a distinctive grey-brown colour.

In its dry form this ingredient hasn't absorbed liquid, so it's noticeably lighter per cup than it would be once soaked or cooked.
