Sour cream
Sour cream is a thick, tangy dairy product made by fermenting cream with lactic acid bacteria, resulting in a rich, slightly sour flavour. It is used as a topping for baked potatoes and Mexican dishes, an ingredient in baking for moisture and tenderness, or a base for dips and dressings. It can curdle if added directly to very hot liquid, so it is often stirred in off the heat or tempered first.
