Soy sauce
Soy sauce is a fermented condiment made from soybeans, wheat, salt, and a fermenting culture, with a deep, salty, savoury umami flavour central to East and Southeast Asian cooking. It is used in marinades, dressings, dipping sauces, and as a general seasoning, with light and dark varieties differing in saltiness, colour, and thickness. Dark soy sauce is generally less salty but more richly coloured and slightly sweeter than light soy sauce.
