Spinach (baby leaves, loosely packed)
Spinach is a leafy green vegetable with tender leaves and a mild, slightly earthy flavour, eaten raw in salads or cooked, where it wilts down dramatically in volume. It is sautéed, steamed, or added to soups, pastas, and pies, and its high water content means a large volume of raw spinach reduces considerably once cooked. Baby spinach leaves are more tender and milder than mature spinach.
Loosely packed means the ingredient is added to the cup without pressing it down, leaving air pockets that make it weigh less than the same amount firmly packed.
