Split peas are dried peas that have had their skins removed and been split in half, cooking down into a soft, thick consistency well suited to soups and purées. They come in green and yellow varieties, both requiring no pre-soaking, though a longer simmer than lentils. Their tendency to break down fully when cooked distinguishes them from firmer whole peas.
