Suet (shredded)

Suet is the hard, crumbly fat found around the kidneys of cattle or sheep, traditionally used in British cooking for puddings, pastry, and mincemeat. It has a higher melting point than butter, which helps create a light, flaky texture in steamed puddings and pastries. Shredded, shelf-stable versions are commonly sold, sometimes coated lightly in flour to prevent clumping.

Shredding produces long, thin strips that trap more air than a fine grate, so shredded measurements are typically lighter per cup.
