Sumac (ground)
Sumac is a tangy, deep red spice made from the dried, ground berries of the sumac shrub, with a lemony, tart flavour used widely in Middle Eastern cooking. It is sprinkled over salads, meats, and dips like hummus, or used in spice blends such as za'atar, adding acidity without the moisture of actual lemon juice. Its coarse, slightly gritty texture is distinctive when used as a finishing spice.
Grinding reduces an ingredient to a fine, even texture that generally packs more densely than a whole or crushed form.
