Sundried tomatoes (oil drained)

Sundried tomatoes are tomatoes that have been dried, either in the sun or with artificial heat, concentrating their flavour into a chewy, intensely savoury-sweet ingredient. They are sold dry or packed in oil, and are used in salads, pastas, and sauces for a burst of concentrated tomato flavour. Dry-packed versions are often rehydrated before use, while oil-packed versions are ready to use straight from the jar.

Draining off the packing oil reduces the weight compared with the undrained form, though some oil typically remains on the surface.
