Sweet potato (mashed)
Sweet potato is a sweet, starchy root vegetable with flesh ranging from orange to purple to white, depending on the variety, and a flavour that becomes richer and sweeter when roasted or baked. It is roasted, mashed, boiled, or fried, and its natural sugars caramelise readily with dry-heat cooking methods. Despite the name, it is botanically unrelated to the regular potato.
Mashing breaks down structure and removes air pockets, making the mashed form denser than the whole or chopped form.
