Tamarind concentrate

Tamarind concentrate is a thick, dark paste made by cooking down tamarind pulp until concentrated, with a sour, slightly sweet, tangy flavour. It is used to sour soups, curries, and sauces throughout South and Southeast Asian cooking, and is more convenient to use than working with whole tamarind pods since seeds and fibres have already been removed. Its concentrated form means only a small amount is typically needed.
