Tamarind paste

Tamarind paste is made from the pulp of the tamarind pod, either left with some fibres and seeds or more refined, with a distinctly sour, tangy, slightly sweet flavour. It is used to add sourness to curries, soups, sauces, and chutneys across South and Southeast Asian cooking. It is often diluted with warm water before being strained and added to a dish.
