Tapioca flour
Tapioca flour, also known as tapioca starch, is a fine, white starch extracted from the cassava root, used as a thickening agent and in gluten-free baking. It produces a glossy, stretchy texture when heated, valued in some gluten-free breads for mimicking the chewiness gluten provides. It is often blended with other gluten-free flours to balance its distinctive stretchy quality.
