Tapioca (pearls)
Tapioca is a starch extracted from the cassava root, most commonly sold as small dried pearls used to make tapioca pudding, where they become soft and translucent when cooked in liquid. It is also used in flour form as a thickener and in gluten-free baking. Its pearls require soaking or slow simmering to fully hydrate and soften.
