Teff flour

Teff flour is milled from teff grain, a tiny, gluten-free cereal native to Ethiopia, with an earthy, slightly sweet, nutty flavour and a fine texture. It is used to make injera, a fermented flatbread, and is also used in gluten-free baking elsewhere. Its distinct flavour and dark colour, particularly from whole grain teff, set it apart from more neutral gluten-free flours.
