Thyme (dried)
Thyme is a small-leaved, aromatic herb with an earthy, slightly minty, woody flavour, widely used in soups, stews, roasts, and marinades. It holds up well to long cooking times, unlike more delicate herbs, and its woody stems are often left whole and removed before serving, or the leaves stripped and used directly. It is a common component of bouquet garni and various spice blends.
Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
