Tiger nuts (dried)

Tiger nuts are small, wrinkled tubers, not true nuts despite the name, with a sweet, slightly nutty flavour and a chewy texture. They are eaten dried as a snack, soaked and blended into drinks like horchata, or ground into flour. Their naturally sweet flavour distinguishes them from most true nuts.

Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
