Tofu (firm crumbled)
Tofu is made by coagulating soy milk and pressing the resulting curds into blocks, with a mild flavour that readily absorbs the taste of marinades and sauces. Its texture ranges from silken and soft to firm and dense, depending on how much liquid has been pressed out, and it is used across many Asian cuisines in soups, stir-fries, and braises. Firmer varieties hold their shape better when fried or grilled.
