Tomato paste
Tomato paste is tomatoes that have been cooked down for an extended time and strained to remove seeds and skins, resulting in a very thick, concentrated tomato flavour. It is used in small amounts to deepen and enrich the flavour of sauces, soups, and stews, often briefly cooked in oil first to intensify its flavour further. Its concentration means a little goes a long way compared to fresh tomatoes or passata.
