Udon noodles (dry)

Udon noodles are thick, chewy Japanese wheat noodles with a smooth, neutral flavour, served in hot broths, stir-fried, or chilled with a dipping sauce. Their thickness and springy texture distinguish them from thinner Japanese noodles like soba or somen. They are sold both fresh and dried, with fresh noodles generally having a softer, more tender bite.

In its dry form this ingredient hasn't absorbed liquid, so it's noticeably lighter per cup than it would be once soaked or cooked.
