Urad dal (dried)
Urad dal refers to split, hulled black gram lentils, creamy white in colour once the black skin is removed, with a mild, slightly nutty flavour. It is used widely in Indian cooking, ground into batters for dishes like dosa and idli, or cooked into dals, and is notable for its slightly sticky, gelatinous quality when cooked. Whole urad dal, with the skin still on, has a darker colour and firmer texture.
Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
