Urfa biber (flakes)
Urfa biber is a Turkish dried chilli pepper, dark maroon to nearly black, with a smoky, slightly sweet, raisin-like flavour and a mild, lingering heat. It is used in Turkish and Middle Eastern cooking, sprinkled over meats, stews, and dips, typically sold as coarse, oily flakes rather than a fine powder. Its distinctive dried processing, which involves partial sun-curing and sweating, gives it a flavour different from other dried chillies.
Flaked pieces are thin and trap air between them, making them lighter per cup than a ground or powdered form.
