Vermouth
Vermouth is a fortified, aromatised wine flavoured with various botanicals, available in dry and sweet styles, used both as a drink and a cooking ingredient. In cooking, it is used similarly to white wine, added to sauces and deglazed pans for acidity and aromatic depth, particularly in dishes with fish or chicken. Dry and sweet vermouth behave quite differently in a recipe, so the type specified generally matters.
