Vinaigrette

Vinaigrette is a simple dressing made by emulsifying oil and an acid, typically vinegar or lemon juice, along with seasonings, mustard, or herbs. It is used to dress salads, drizzle over roasted vegetables, or marinate proteins, with a typical ratio of roughly three parts oil to one part acid. It naturally separates on standing and is usually whisked or shaken before use.
