Vital wheat gluten
Vital wheat gluten is a concentrated form of wheat protein, extracted by washing the starch out of wheat flour dough, leaving a highly elastic, protein-rich powder. It is added to bread dough to boost gluten content and improve rise and chewiness, particularly in whole grain or low-protein flour breads. It is also used as a primary ingredient in making seitan, a meat substitute.
