Vodka
Vodka is a clear, neutral-flavoured spirit distilled from grains or potatoes, used in cocktails and, in cooking, occasionally added to pastry dough since its alcohol inhibits gluten development, producing a more tender, flaky crust. It evaporates readily during baking, leaving little residual flavour. It is also used in some sauces, such as vodka pasta sauce, where its alcohol content mostly cooks off.
