Wakame (dried)

Wakame is a type of edible seaweed with a mild, slightly sweet, briny flavour, commonly used in Japanese cooking, particularly in miso soup and seaweed salads. It is usually sold dried and needs to be rehydrated in water before use, during which it expands significantly in volume. Its tender, slightly slippery texture once rehydrated distinguishes it from tougher seaweeds like kombu.

Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
