Water chestnut flour
Water chestnut flour is made from ground, dried water chestnuts, with a mild, slightly sweet flavour and a texture used as a thickener in East Asian cooking. It produces a glossy, somewhat translucent result when used to thicken sauces and batters, and is sometimes used in place of cornstarch. It is naturally gluten-free.
