White balsamic vinegar (liquid)
White balsamic vinegar is a lighter-coloured variation of balsamic vinegar, made using white grape must and vinegar, cooked at a lower temperature to prevent it from darkening. It has a milder, sweeter, less syrupy flavour than traditional dark balsamic vinegar and is used in dressings and marinades where its lighter colour and flavour are preferred, such as in light-coloured sauces. Its flavour is generally less complex than aged dark balsamic.
As a free-flowing liquid, this ingredient fills a measuring cup with no trapped air pockets, so its weight is close to a straightforward density calculation.
