White cabbage (shredded)

White cabbage is a common variety of cabbage with pale green, tightly packed leaves and a mild, slightly peppery flavour raw that sweetens when cooked. It is eaten raw in slaws, fermented into sauerkraut, or cooked in soups, stir-fries, and braises. Its dense structure holds up well to long cooking times without disintegrating.

Shredding produces long, thin strips that trap more air than a fine grate, so shredded measurements are typically lighter per cup.
