White miso
White miso is a mildly fermented Japanese soybean paste, aged for a shorter time than red miso, resulting in a pale colour and a sweeter, less pungent flavour. It is used in lighter soups, dressings, and glazes where a more delicate umami flavour is wanted. Its milder taste means it is often used more generously than the stronger red or dark miso varieties.
