Yeast (dried, active)
Yeast is a single-celled fungus used as a leavening agent in baking, consuming sugars in dough and producing carbon dioxide gas that causes bread to rise, along with alcohol and flavour compounds. It is sold in fresh, active dry, and instant forms, each requiring slightly different handling before being incorporated into a dough. It is also used in brewing beer and making wine.
Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
