Yellow lentils (uncooked)
Yellow lentils are small, split lentils that cook down into a soft, creamy consistency, similar to red lentils but slightly milder in flavour. They are used widely in Indian cooking, simmered into dals and soups, and require no pre-soaking due to their small size and thin skins. Their tendency to fully soften makes them well suited to thick, smooth lentil dishes.
