Yellow mustard seeds
Yellow mustard seeds are the mildest variety of mustard seed, with a subtle, slightly sweet flavour compared to the sharper brown and black varieties. They are used whole in pickling brines and some Indian tempering dishes, or ground to make mild yellow mustard condiment. Their milder heat makes them a common choice when a less pungent mustard flavour is desired.
