Yuzu juice (liquid)

Yuzu juice is the tart, aromatic juice extracted from yuzu, a Japanese citrus fruit with a flavour combining notes of grapefruit, mandarin, and lime. It is used in Japanese cooking, in dressings, marinades, and sauces like ponzu, prized for its distinctive fragrance more than its juice yield, since the fruit is not particularly juicy. Its intense aroma means a small amount can flavour an entire dish.
