Zucchini noodles (raw, spiralised)
Zucchini noodles, sometimes called zoodles, are made by cutting fresh zucchini into long, thin, noodle-like strands using a spiraliser or vegetable peeler. They are eaten raw or briefly cooked as a low-carbohydrate substitute for pasta, with a mild, slightly sweet flavour and a tender-crisp texture. Their high water content means they release liquid readily, so they are often salted and drained or cooked only briefly to avoid becoming watery.
